Ingredients
- Vegetables (Carrot, Beans, Potato, Soya Chunks, Green peas) – 250gms
- Basmati Rice – 500gms ( approx 2.5 cup)
- Onion(Medium) – 3 Nos.
- Tomato medium – 3 Nos.
- Ginger – 2 Inches
- Garlic – 1 Bulb
- Green Chillies – 10 Nos.
- Lemon – 1 No
- Cloves – 4Nos
- Green Cardamom – 3Nos
- Cinnamon – 1 Small piece
- Coriander Leaves – 1/2 bunch
- Mint leaves – 1/4 bunch
- Yogurt /Curd – 100 ml
- Turmeric powder – small pinch
- Red chilli Powder – 1 tsp
- Water – 4 cups ( 1 cup rice= 1.5 cup water)
- Cooking Oil – 10-12 tbsp
- Ghee – 5 tbsp
- Salt – As per your taste
Raitha preparation:
Items required: Yogurt, Onion, green chilly, coriander leaves, carrot, cucumber, salt
Method:
- Cut onion into very small cubes, green chillies into thin circles, cut coriander leaves, grate carrot and cucumber.
- Add all these above ingredients into yogurt , mix them well add some salt to taste it up.
Amazing “Raitha” is ready to cool out your tongue
Ginger Garlic Paste:
- Clean and Wash (Ginger, Garlic, 2 Green chillies)
- Add half onion and add all these into a mixer Jar to grind them into a fine paste.
Cooking Method:
- Heat the pressure cooker – add oil and ghee
- Add Cloves, Cardamom, Cinnamon , Bay leaf
- Add finely Chopped Onions
- Stir few mins until onions turn transparent and brown
- Add cut coriander leaves and mint leaves , stir them for a minute
- Add Ginger/Garlic paste and stir until raw smell goes
- Add Tomatoes and green chillies and stir all these ingredients in Medium flame for few mins until oil separates
- Add red chilli powder and salt – stir them all for 2 mins to blend nicely
- Add veg and stir them for a minute
- Add yogurt and stir them for 2mins
- Add salt and required amount of water and leave to boil .
- Add lemon juice and check for the taste (add if more salt is needed)
- once water is boiled add the basmati rice and mix well before closing the lid
- Keep it high flame for 2mins and lower the flame until you hear the whistle.
- Once pressure is gone , add ghee over the food .
Serve this delicious Veg- briyani with raitha and enjoy your meal to your full.
