South-Indian Chicken Curry

Preparation Time: 1:30mins

Serves: 8- 10 Nos

Goes well with : Rice, Idly, Dosa, Chapati, Parotta, Ragi Ball.

 

Ingredients:

  • Chicken                            – 1 Kg
  • Onion(Medium)              – 3 Nos.
  • Tomato Puree (Large)    – 3 Nos.
  • Ginger                              – 2 Inches
  • Garlic                                – 1 Bulb
  • Green Chillies                  – 3 Nos.
  • Cloves                               – 4Nos
  • Green Cardamom           – 3Nos
  • Cinnamon                        – 1 Small piece
  • Fennel seeds                   – 2 tbsp
  • Cumin seeds                   – 1 tbsp
  • Black Pepper                   – 2 tsp
  • Coriander seeds             – 1 tsp
  • Turmeric Powder            – 1 tbsp  
  • Red chilli Powder            – 1.5 tbsp (Add More if required)
  • Coriander Powder          – 2 tbsp
  • Chicken Masala powder   – 3 tbsp
  • Curry Leaves                   – 2 Strands
  • Coriander Leaves           – 5 Strands
  • Water                               – 250 ml (It depends)
  • Cooking Oil                     – 50 ml
  • Salt                                   – As per your taste

Ginger Garlic Paste:

  • Clean and Wash (Ginger, Garlic, 2 Green chillies, 2 strands Coriander leaves) grind them all together to a fine paste.

Garnishing Powder:

  • Dry roast Cumin, Fennel 1 tbps, Black Pepper and Coriander seeds 
  • Then add all these into a mixer jar to grind them to a fine powder.

Cooking Method:

  • Heat the Pot and add Oil
  • Add Cloves, Cardamom, Cinnamon , Cumin , Fennel
  • Add finely Chopped Onion and Curry leaves
  • Stir few mins until onion turns transparent and brown
  • Add Ginger/Garlic paste and stir them all until raw smell goes
  • Add Tomato puree to the masala and slit Green chillies
  • Stir all these ingredients in Medium flame for few mins until oil separates
  • Add red chilli powder, coriander powder , turmeric powder and salt – stir them all for 3 mins to blend nicely
  • Add washed chicken into masala and saute it well to get mixed
  • Add chicken masala powder , water and salt as per your taste
  • Cook in medium flame for 20- 30 mins occasionally stir the curry.
  • Finally add the garnishing powder and mix well.
  • Turn off the flame
  • Garnish it with finely chopped coriander leaves.

Serve this yummy mouth watering hot and spicy dish with crispy ghee Dosa for breakfast / dinner with your loved ones…
