Tangy Garlic Curry

Preparation Time: 35 mins

Serves: 5 Nos

Goes well with : Rice, Idly, Dosa.

Ingredients:

  • Onion(Medium)                – 1 Nos.
  • Shallots                              – 10-15 Nos
  • Tomato Puree (Large)      – 2 Nos.
  • Tamarind extract (thick) – 4-5 tbsp 
  • Garlic                                 – 1 whole bulb
  • Green Chillies                   – 2 Nos.
  • Fenugreek seeds             – 1 tbsp
  • Cumin seeds                     – 1 tbsp
  • Black Pepper                     – 1 tsp
  • Curry Leaves                     – 2 Strands
  • Coriander Leaves             – 5 Strands
  • Turmeric Powder               – 1 tsp  
  • Red chilli Powder               – 1.5 tbsp (Add More if required)
  • Coriander Powder             – 2 tbsp
  • Jaggery                               – 1 tsp
  • Water                                  – 1 to 1.5 cup
  • Sesame/Groundnut Oil     – 50 ml
  • Salt                                       – As per your taste
Cooking Method:
  • Heat a pan and add Oil
  • Add fenugreek seeds , pepper and then cumin seeds
  • Add garlic cloves with curry leaves
  • Add roughly chopped shallots and onion paste
  • Stir 5 mins until onion turns transparent and brown
  • Add Tomato puree and slit green chillies
  • Stir all these ingredients in low flame for few mins until oil separates
  • Add red chilli powder, coriander powder, turmeric powder and salt – stir them all for 2 mins to blend nicely
  • Add the tamarind paste and water 
  • Leave the masala to cook for 15- 20 mins in medium flame
  • Occasionally stir the curry
  • When the curry texture thickens add jaggery and
  • Turn off the flame
  • Garnish it with finely chopped coriander leaves.
